    Preserved Meyer lemon is the umami of everyday foods - a shortcut to brighter flavors in every spoonful - when added to raw meat and fish before grilling, vegetables before roasting, desserts before baking and cocktails before shaking.

     

    • Bay Leaf: A friend of fish and fowl. Beloved by dips and sauces. It's a fixture at the butcher and baker and a permanent resident of pasta dishes. A chef in Napa uses our Bay Leaf Preserved Lemon to replace fresh herbs, lemon and garlic, letting the chicken rest overnight before grilling on the rotisserie. Pair with yogurt and buttermilk for marinades and dressings.
    • Cumin Garlic: Seafood’s loyal companion and a fan of Asian-inspired dishes. It’s perfect with miso and sesame oil and as a rub for fish. Its lower acidity means it doesn’t “cook” seafood, making it a favorite among fishmongers. Rub 1 teaspoon per serving on raw seafood and marinate for up to 24 hours before cooking. Transform guacamole with one step—just add a spoonful to ripe avocados for a tangy, smooth creaminess.
