FIRE CIDER


INGREDIENTS

1/2 cup fresh ginger root, grated 1/2 cup fresh horseradish root, grated 1/4 cup fresh turmeric root, grated 1 medium onion, chopped 10 cloves of garlic, crushed or chopped

2 jalapeno peppers, chopped Zest and juice from 1 lemon or orange 2 Tbsp of dried rosemary or thyme 2-3 cups raw apple cider vinegar 1/4 cup of raw local honey (optional)

Fire cider is a traditional remedy for congestion, colds and flus. This tart-spicy tonic is also said to promote immune health, increase circulation and aid digestion.

Combine all ingredients except the vinegar and honey in a quart jar. Fill the rest of the jar with apple cider vinegar. Place a piece of natural parchment paper under the lid to keep the vinegar from touching the metal, or use a plastic lid. Shake well.

Store in a dark, cool place for one month, shaking daily if possible. After one month, strain your infusion using muslin cloth and a strainer. Use your hands to bundle the cloth and squeeze out every last drop! Add honey, if using, and stir to fully incorporate. Store fire cider in a cool dark place.

USING FIRE CIDER

Drink 1 to 2 tablespoons at the first sign of a cold. Repeat every 3-4 hours until symptoms end. You can also take a daily "shot" of fire cider for immune, circulatory and digestive support. Fire cider is delicious in place of plain vinegar in dressings and sauces, and as an addition to soups, stews, marinades and even cocktails!
