Acid Blend: A 1/3 mix each of citric, tartaric and malic acids. Primarily used in fruit wines to adjust acid levels.
Tannin Complex: Tannins that are added post-fermentation to improve the overall structure, texture and mouthfeel while helping to protect the wine from oxidation during aging. It is composed of proanthocyanidins and ellagic tannins that integrate easily into young wines.
