Japanese Rock Sugar

Rock sugar typically has a milder sweetness level than a comparable amount of pure table sugar. Since it is made from a water and sugar solution, it is more diluted than refined sugar. It's recommended to use in our Umeshu Ume Plum Wine Recipe. Rock sugar takes time to dissolve, which helps to extract the flavors and fragrance from the plums at a slower pace.
