    From the famed Fatted Calf charcuterie and butcher shop comes three different varieties of salametti (small salami), each one made from a specific breed of pork including:

    • Red Wattle breed with black pepper and Spanish pimenton
    • Berkshire breed with Armagnac and spices
    • Duroc breed with fennel pollen and red wine. 

    Heritage pork has notably more marbling resulting in more tender and juicy meat! All three breeds of heritage pork are humanely raised on pasture, 100% antibiotic-free, and raised by independent family farmers.
