This is a demonstration-style class. Bay Area based Reculture Foods ferments soy-based tempeh reminiscent of Indonesia, the makers’ ancestral land. We will engage in the topics of ferments, culture, and reclamation (and a tiny bit of fermentation science). Join us!

About the Event
Tempeh (‘tempe’ in Bahasa Indonesian) is a storied protein staple, found in all parts of the archipelago today. Its history is vast - rooted in royal celebrations, daily enjoyment, war and famine. The class includes a tempeh tasting, discussion and demonstration of how to make tempeh at home. We'll cover the initial fermentation process, pre-inoculation, and inoculation with the tempeh starter (ragi). We will also provide an expansive understanding of the cultural context of Indonesian tempeh and its popularity in the U.S. (The Bay Area played an important role!) We will engage in the topics of ferments, culture, and reclamation (and a tiny bit of fermentation science). Join us!
This class is led by Bay Area based Reculture Foods.
Participants will receive a risograph printed zine of tempeh recipes.
All students will receive a 10% discount on post-workshop purchases at Preserved. The minimum age for our workshops is 14 years old.
