
Modern Miso Making
This is a hands-on workshop. Together we'll learn about koji - the fungi responsible for miso, shoyu, sake and more! Then we'll make a batch of "modern" miso using koji rice, chickpeas and a seasonal vegetable.

About the Event
Get immersed in the tradition, technique and science of koji based fermentation. As part of this hands-on workshop, each student will receive a quart-size jar of "modern" miso to take home and ferment!
This workshop is led by Eleana Hsu, co-founder of Shared Cultures in San Francisco. Eleana's passion for fungi and fermentation, as well as her Chinese-American heritage, feed her explorations of miso making with seasonal Northern California ingredients.
All students will receive a 10% discount on post-workshop purchases in our store. The minimum age for our workshops is 14 years old.
