    Takuan is a classic type of Japanese pickle that is slowly fermented using traditional methods. First the daikon radish is dried in the sun to bring out its natural sweetness. Then, it's fermented with sea salt, rice bran and red pepper. Unlike most modern Takuan available, this is free of yellow dye, sugar, corn syrup and preservatives.
