Josh will discuss the differences between French and German knives, carbon and stainless steel knives, and review how best to keep your knives sharp. 


ABOUT THE MAKER

Josh Donald is co-founder of San Francisco's Bernal Cutlery established in 2005. Josh wears many hats at Bernal Cutlery, but his favorite ones involve sharpening, refurbishing vintage and antique knives, and visiting knife makers in heritage knife-making towns, especially in Japan and Europe.
